Etouffee, Brutus?
We recently ran across this blog item from the Brick Oven Bistro. It seems they’re committing the sacrilege of messing with their famous crawfish etouffee recipe. We decided that we owed it to our Behind the Menu fans to get down to the bottom of this rumor, so we cornered owner Jeff Nee to get his side of the story.
So how DO you improve on the Brick Oven Bistro etouffee? As Jeff explains, there’s another crustacean involved in the answer.
